School is back in full swing! At our house that means slightly moody children who do not like being roused from bed early in the morning!
Is it just me or does there seem to be WAY too much drama over breakfast choices as the school year begins? I’d love to be the kind of mom who is up early enough to make a hot meal each morning…
But, in reality, I’m the kind of mom who stays up too late working and is tired in the morning. I’m happy to just be in the kitchen, showered and clutching a cup of coffee while the kids eat breakfast.

One easy solution for an EASY healthy breakfast is baked goods. I’m not talking donuts and pop tarts… I’m talking real food ingredients combined to make a delicious and nutrition meal.

How To Make Healthy Cookies Without Flour, Sugar, Dairy or Eggs
The healthy chocolate cookies are made with simple ingredients you probably have in your kitchen. There are no “special ingredients” sometimes called for in gluten-free recipes (no coconut flour, almond flour, xanthan gum, or guar gum) and they have no artificial sweetener.

You’re probably wonder, “How can you make cookies with no flour, no dairy, no eggs, and no sugar?” It’s easy:
- Banana replaces white sugar in the recipe and makes the cookies sweet.
- Oatmeal replaces wheat flour giving the cookies a cakey texture with no gluten (no special flours needed)
- Nut butter adds healthy fat to the recipe and gives the cookies the yummy “mouth feel” you want in baed goods.
My favorite thing about this cookie recipe? My kids love making them! (Bonus: The cookie batter contains no eggs so you don’t have to worry about kiddos people licking their fingers!)
How to Make Healthy Chocolate Cookies with Oatmeal
These cookies are made with oatmeal which is not as smooth as wheat flour. If you mix the batter in the food processor it will chop up the oats and give the cookies a more traditional cookie texture. It also helps to eliminate any banana chunks in the cookies.

Add your own toppings to customize the flavor of these healthy chocolate cookies.
- We add a few walnuts, chocolate chips, raspberries or even shredded coconut to the top. (The cookies are also yummy plain!)
- The cookie dough is thick so it is easiest to add the toppings once the cookies are on the cookie sheet.

Description

Ingredients
- 2 large ripe bananas (3/4 of a cup mashed)
- 1 cup old fashioned oats
- 4 Tablespoons peanut butter or almond butter (no sugar added)
- 2 Tbsp cocoa (unsweetened)
- 1 tsp vanilla extract
- 1/8 tsp salt
Instructions
- Preheat oven to 350 degrees
- Add bananas to food processor and blend until smooth.
- Add remaining ingredients to food processor and blend until smooth and well combined. Scrape down sides of food processor as needed.
- Scoop 2 tbsp of batter onto parchment lined cookie sheet.
- Smooth slightly into cookie shape.
- Add a few pieces of fruit, nuts, or chocolate chips to the top of each cookie (if desired).
- Bake for 12-14 minutes. (The cookie may look slightly underbaked on the surface but should be cooked through, check by breaking open a cookie.)

I’ve never tried the cookies without nut butter. I think you might be better off making one of my healthy muffin recipes and baking them as cookies.

Yes, you can use oat flour. I’ve never made the cookies without using old fashioned oats so I can’t give you the exact measurement. -Bren

I made these with applesauce and oat bran (instead of banana and oatmeal) and they were quite good! If you wanted to up the sweetness a bit you could add some pureed dried fruit, fruit juice concentrate, or fruit sweetened jam. You wouldn’t want to replace all the banana with these though, it would be much too sweet.
