Becoming a (Copycat) Gourmet
My husband’s job requires a lot of socializing with coworkers and their spouses, usually in the form of cocktail parties where each couple brings an appetizer to share. I would stress out over the recipe I was going to prepare when we were first married. I knew none of his coworkers and was always blown away by the dishes prepared by the other spouses.
My solution was to visit the local gourmet food and wine store that showcased an hors d’oeuvre of the week before each party. I purchase the supplies and then painstakingly recreated the recipe before the party. I was a gourmet copycat and it cost me an arm and a leg!
My Favorite 5 Minute Appetizer Recipe
Fast forward 16 years… I am now a working mom with far less time to obsess over my appetizer offering and zero time to seek out a gourmet food store in my area. Luckily, I found an easy, affordable way to recreate our favorite recipe from my “gourmet copycat” period and I can get all the ingredients at my local grocery store.
The recipe features cucumber cups and mini cherry peppers stuffed with Boursin® Garlic & Fine Herbs Cheese. The flavor of the vegetables paired with the creamy, crumbly cheese makes the perfect appetizer combination. I love the premium Boursin® cheese with cool, crisp cucumbers while my husband loves it with the slightly spicy peppers (Peppadew are our favorite).
The combination of red, green, and white looks like an up-scale recipe but it’s really a bargain solution that can be prepared in 5 minutes. Score one for Bren!

Ingredients
- 1 box Boursin® Garlic & Fine Herbs Cheese
- 1 jar cherry peppers or peppadew
- 1 English cucumber (thin)
Instructions
- Wash and dry cucumber then peel thin strips from the skin, leaving stripes of peel. Drain and lightly rinse peppers.
- Cut cucumbers into 1.5 inch slices and use a spoon to carve a small bowl into each piece.
- Use a paring knife to cut around the pepper stems and remove the seeds.
- Spoon Boursin® Cheese into each pepper and cucumber cup.
- Sprinkle serving plate with chopped chives or parsley before serving. Enjoy!

I like to mix a tablespoon of brown sugar w/a quarter tsp of cinnamon in 8 oz of creamy vanilla lowfat yogurt. I slice red delicious and granny smith apples for dipping. For Christmas I add oranges to the tray, and for Easter I add strawberries or other seasonal fruit. For summer I add pears. I dip the apples and pears in lemon juice to keep them from browning.
