Description
Homemade ice cream bars are a guilty pleasure with a little less guilt when you make your own two ingredient chocolate coating. This easy magic shell recipe is great on fruit, an ice cream bar, or even a bowl of ice cream.
Ingredients
- 1 pint ice cream (any flavor)
- 1 cup chocolate chips
- 2 tbsp coconut oil
Instructions
- Spoon ice cream into popscicle molds and freeze until firm. Overnight is best.
- Place chocolate chips and coconut oil in a glass jar or microwave safe bowl and heat for 30 seconds on full power. Stir until smooth. Heat for an additional 15-30 seconds if necessary. Cool to room temperature.
- Remove ice cream from molds and quickly dip each bar in the chocolate “magic shell” mixture. Place on wax paper lined tray and return to freezer if ice cream is melting.
- You can also spoon the chocolate “magic shell” mixture over scoops of ice cream for an easier treat. Enjoy!

I love making this easy ice cream topping, it contains less additives and artificial flavoring than store-bought ice cream topping but work the same way and tastes even better.
You can even share some with your kids. They will love it and the ice cream will be gone in a flash.

Hi! I tried your recipe and it sort of worked for the first popsicle, although half fell off. For the rest of my popsicles, the chocolate just fell off the ice cream popsicles. It kind of melted away then fell off in stiff chunks.
I’ve tried numerous combinations of chocolate, coconut oil and vanilla popsicles but the chocolate just keeps falling off. Does it have something to do with the temperature? Do you have any tips?

I’m sorry you’re having trouble, Trine. Make sure the ice cream is really cold and solid on the stick before dipping and them put them back in the freezer immediately to harden up. If you have a type of ice cream that does not stick well to the popscicle stick (light or whipped) that can cause problems.
