Description

Delicious chewy homemade oatmeal chocolate chip cookies with less sugar and fat than the originals. Also replaces some of the white flour with ground oatmeal and whole wheat.

Ingredients

Scale
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup coconut oil
  • 3/4 cup white sugar
  • 3/4 cup brown sugar (packed)
  • 2 eggs
  • 1 tsp vanilla
  • 2 Tbsp skim milk (if needed to thin the dough)
  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1 1/2 cups oatmeal
  • 1 cup oatmeal ground in food processor or blender
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. Cream together butter, coconut oil and sugars.
  3. Add eggs and vanilla then mix well.
  4. Add the flours, oatmeal, salt, baking powder and baking soda.
  5. Mix together until well incorporated. If the dough is too thick add 2 tbsp of milk to thin.
  6. Add the chocolate chips and mix gently.
  7. Drop 1 tablespoon of dough for each cookie onto parchment lined cookie sheets.
  8. Bake for 8- 10 minutes.
