Our kiddos are big fans of coffee cake (the buttery sweet kind with a crunchy cinnamon crumb topping and a light glaze) maybe because they did an awful lot of hanging out in coffee shops when they were toddlers. Don’t judge me too harshly; we were living in the Pacific Northwest. Coffee is a necessity of life when it is foggy and rainy 9 months of the year, you live with 2 preschoolers, and your husband is traveling for work!
Okay, less therapy blog and more streusel coffee cake talk! So we love delicious coffee cake and it makes a great Sunday morning treat, but I don’t like getting up extra early to make said coffee cake. (Our elementary school starts at 7:45 a.m. and I teach night classes so I love my “sleep in” days. And by sleep in I mean get up at 8 a.m., the glamorous life of a mom!)

Description
We love delicious coffee cake and it makes a great Sunday morning treat, but I don’t like getting up extra early to make it. Enter the microwave and a mug… seriously delicious coffee cake in 5 minutes or less! Makes one seriously decadent serving or two sweet treats.
Ingredients
Coffee Cake:
- 2 tbsp unsalted butter (softened)
- 4 tbsp sugar
- 1 egg
- 4 tbsp plain Greek yogurt
- 1/4 tsp vanilla
- 1/2 cup flour
- 1/4 tsp baking powder
- Crumb filling and topping
- 2 tbsp unsalted butter (softened)
- 4 tbsp flour
- 2 tbsp brown sugar
- 2 tsp cinnamon
- 2 tsp chopped walnuts (optional)
Glaze:
- 1/8 cup powdered sugar
- 1–2 tsp milk
- 1/4 tsp vanilla
Instructions
- Mix the batter in a small bowl.
- Cream together softened butter and sugar.
- Add egg, Greek yogurt and vanilla; beat until smooth.
- Add flour and baking powder; blend.
- In a separate mug or small bowl combine ingredients for crumb topping and blend until crumbly.
- In a large coffee mug or two small mugs layer batter,crumb topping, batter and finally crumb topping .
- Microwave on high for 1 minute. If you are making one large mug it may need another 30 seconds – 1 minute. Check by inserting toothpick into the center, if it comes out clean your cake is done. If not, microwave 20 more seconds.
- In a clean bowl, stir together glaze ingredients. Once smooth drizzle over the coffee cake.
- You can serve the coffee cake right in the mug, or get all fancy pants and put it on a plate.
- This coffee cake serves 2 adults or 1 adult and 2 smallish kids.
