My kids like to relax after a long day of swim team or a busy week at school by watching a family friendly television show or movie. Unfortunately, we don’t always like or even agree on the same movies or television shows!
One genre we can all agree on is reality based cooking competitions.
Our all time favorite food competition shows is Cupcake Wars. On each episode four cupcake bakeries from across the US make their best cupcakes focusing on a certain theme such as outer space, animals, Comic Con or even monster trucks.
The bakers try to wow the judges using unusual ingredients and outrageous flavor combinations. There are some crazy cupcakes created; cornbread jalapeno, peanut butter chocolate and even candied cricket have been featured!

My kids and I enjoy making these microwave brownies together while we image being on Cupcake Wars.

You’ll love these quick microwave cupcakes that are full of chocolate peanut butter flavor but contain no refined white sugar! They are topped with an easy peanut butter magic shell sauce. Add your favorite ice cream and you are in dessert heaven!
Ingredients
Peanut Butter Chocolate Cupcakes
- 2 tablespoons virgin coconut oil or unsalted butter (melted)
- 2 tablespoons creamy peanut butter
- 2 tablespoons honey
- 1/2 teaspoon vanilla
- 1 egg
- 1 tablespoon milk
- 1/2 cup unbleached all purpose flour
- 3 tablespoons cocoa powder
- 1/8 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup mini chocolate chips
Peanut Butter Magic Shell Ingredients
- 1/8 cup creamy peanut butter
- 1 tsp honey
- 1/2 tablespoon virgin coconut oil
Toppings
- 1/4 cup mini chocolate chips
- 1 cup ice cream (optional)
Instructions
Peanut Butter Chocolate Cupcake Directions:
- In a 4 cup microwave safe bowl combine virgin coconut oil, creamy peanut butter and honey. Heat for 20 to 30 seconds in the microwave and stir until smooth.
- Stir egg, vanilla and milk into peanut butter mixture until well combined.
- Stir flour, cocoa powder, salt, and baking powder into batter and stir until no lumps remain. Stir in ¼ cup chocolate chips.
- Grease four 6 ounce microwave safe ramekins or mugs with coconut oil. Measure 2 ½ tablespoons of batter into each ramekin.
- Microwave each ramekin separately for 20-30 seconds on high power. The batter will nearly double in size but the top will still look like batter. To test to see that the brownies are done, use a spoon or fork to carefully push aside a spoon full of the center. The inside of the brownie should be the texture of cake, if it is not done microwave for another 10 seconds then recheck. Continue baking all the cakes.
- Top each cake with ¼ cup of vanilla ice cream and top with the peanut butter magic shell. The magic shell will harden where it touches the ice cream. Top each cup with the remaining chocolate chips and enjoy!
Peanut Butter Magic Shell Directions:
- Place all ingredients in a microwave safe bowl and heat for 20-30 seconds. Do not boil. Stir until smooth. Store leftovers in the refrigerator and heat to room temperature before using. Spoon over ice cream or frozen banana slices. The magic shell will solidify on the frozen items.

Yum! I cut this recipe in half for me and my husband to enjoy last night after the kids went to bed. It was a perfect treat because I could make it quickly in the microwave and warm cake with cold ice cream is amazing!
